Breakfast is not just for breakfast anymore


I love breakfast. It is my favorite meal. Many people just have a bowl of cereal, or coffee and toast, because they are in a hurry. Sometimes on weekends, they simply sleep late. No problem, There is no rule that says you have to eat breakfast in the morning.

One night this week, I couldn’t decide what I wanted for dinner. A thought suddenly came to me,  “How about breakfast tonight?” I decided to have homemade biscuits, grits, and an omelet. Then, I changed my mind, and decided to have hash brown potatoes instead of grits, as a change of pace. In about fifteen minutes, I felt like I was in heaven. The food was so, so delicious. There’s something special about eating breakfast in the evening instead of the morning. It’s so good, because you’re not in a hurry, and can take the time to appreciate and enjoy the good food.

On this particular evening, this was better than steak. I love steak , but I was not in a steak mood. Another great breakfast dish to have for dinner is pancakes. They are so versatile. You can add cherry, strawberry, apple or blueberry pie filling on the top. Then, add a scoop of sour cream, splash on your favorite syrup, and my friend, you are in business. Try making pan cakes with chopped pecans in the batter. You will be pleasantly surprised. You can even make them with blueberries in the batter. Or course, whatever you can do with pancakes, you can also do with waffles.

How about French Toast for dinner. This is  a win win situation. There’s more to French Toast than just eggs and milk. With a little imagination, you can make French Toast taste like a million dollars.

Yes, folks, “Breakfast is the most important meal of the day,” as it has been said so many times. If you miss breakfast, don’t worry. You can still have it – for dinner.
